Edamame Guacamole, (guacamole
with soy, so you can get your protein on!)
1 cup
shelled edamame
(12oz
unshelled)
1/2 cup
unflavored soy milk
2 tbls.
chopped cilantro, no stems
2 cloves
garlic, minced
1 tsp
chopped chipotle chili, (optional)
1 large
avocado
2 tsp of
fresh lime juice
Salt &
pepper
Cook
edamame in salted boiling water 5 mins. Drain and cool to room
temp. Combine edamame, soy milk, cilantro, garlic, and chile in
the bowl
of food processor.
Process until smooth. Set aside Peel and
seed avocado and place in medium mixing bowl. Add lime juice and
mash with fork, leaving small
chunks. Add edamame mixture and
stir just to combine. Season with S & P. Garnish with cilantro.
